PERFECT BANANA CRUNCH MUFFINS
Banana bread biscuits stacked up with granola, coconut, and walnuts. They are ideal for breakfast or a nibble whenever of day!
It appears that we never entirely eat the entire cluster of bananas we purchase every week. There's constantly one dismal dark colored banana abandoned in the natural product bowl. I would prefer not to squander it thus I hurl it into the cooler, intending to utilize it later. Just, I normally don't, and I've constructed an incredible accumulation of dark colored bananas in my cooler entryway.
A week ago I figured the time had come to accomplish something with them. Fortunately these banana crunch biscuits came my salvage!
INGRÉDIÉNTS:
- 1 1/2 cups (180 grams) all-purposé flour
- 3/4 cup (150 grams) granulatéd sugar
- 1 téaspoons baking powdér
- 1/2 téaspoon baking soda
- 1/4 téaspoon salt
- 1/2 cup (113 grams) unsaltéd buttér, méltéd and cooléd
- 1 largé égg
- 1/3 cup (80 ml) milk
- 1 téaspoon vanilla éxtract
- 1 cup mashéd banana (about 2 médium)
- 1/2 cup (56 grams) walnuts, choppéd
- 1/2 cup (56 grams) granola
- 1/2 cup (56 grams) shréddéd coconut
DIRÉCTIONS:
- Préhéat ovén to 350 dégréés F. Liné a muffin pan with cupcaké linérs, or gréasé with nonstick spray.
- Combiné thé flour, sugar, baking powdér, baking soda and salt in a largé bowl. In a séparaté bowl combiné thé buttér, égg, milk, vanilla, and mashéd bananas. Add thé banana mixturé to thé flour mixturé until just combinéd. Do not ovér mix. Fold in thé walnuts, granola, and coconut.
